Flax Crusted Chicken serve with Sweet Potato and Broccoli

Have a balanced fiber rich dinner with delicious flax crusted chicken, a sweet potato and a cup of streamed broccoli.... Enjoy!

Serves: 1
  • 6 oz. chicken breast
  • 1 egg white
  • flax and oat crust
  • 1 medium sweet potato (baked w/ cinnamon)
  • 1 cup streamed broccoli
  1. For chicken:
  2. Grind or blend 2 tbsp. of flaxseed with 2 tbsp. of rolled oats
  3. Baste uncooked chicken breast with egg white
  4. Cover chicken with flax/oat crust
  5. Lightly grease a casserole dish
  6. Preheat oven at 400 degrees
  7. Bake flax/oat crusted chicken for 25 minutes or until it is brown and reaches 180 degrees
Serve with:
a baked sweet potato garnished with cinnamon
1 cup of streamed broccoli
Salt and pepper for taste or use a healthy blend of Mrs. Dash salt-free
