Spicy baked Plantains

Need an energy boost...Try our baked spicy plantains.
Ingredients
  • 8-10 small plantains (green/yellow- not too riped!)
  • 1½ tbsp. olive oil
  • ½ tsp cumin
  • ⅛-1 tsp. red pepper blend or cayenne pepper
  • Salt and pepper to taste
  • Olive oil-pan spray
  • ¼-2/3 cup of ketchup used as dip
  • Hot sauce (optional)
Instructions
  1. Preheat oven 400 F
  2. Peel and slice plantains into small to medium- sized slices.
  3. Put sliced plantains into mixing bowl. In bowl
  4. toss plantain slices with olive oil and seasonings
  5. Lightly spray a large sized cookie sheet with olive oil
  6. Evenly spread a single layer of sliced plantains on the cookie sheet
  7. Bake for 20 to 25 mins. or until evenly brown; turn slices after about 10 mins.
  8. Watch closely can burn fast and easily!
  9. Serve with ketchup dip
Notes
Good source of potassium, Vitamin A & Vitamin C, and dietary fiber
Substitute salt for Mrs. Dash original blend salt-free
