Loaded Veggie Fries with Ketchup Hummus

Try this delicious vegetarian snack.
Ingredients
  • Fries
  • 6 stalks of celery-washed, sliced in half and sliced again longways down the middle
  • 2 cups of carrot sticks or baby carrots- washed
  • 2 bell peppers-washed, sliced into strips
  • Ketchup Hummus
  • 1 (15 oz.) can of garbanzo beans or chickpeas, rinsed and drained
  • ¼ cup of ketchup
  • 1 clove of garlic
  • 1 tbsp lemon juice
  • ¼ tsp ground cumin
  • 2 tbsp olive oil
  • Toppings
  • Add a few of your favorite toppings, scallions, jalapenos, or avocado
Instructions
  1. Combine all hummus ingredients (chickpeas, ketchup, garlic, lemon juice, cumin, and olive oil) in a food processor
  2. Blend for 2 minutes or until smooth
  3. Transfer to a bowl or empty ketchup bottle
  4. Place sliced veggies into a paper fry boat or plate
  5. Top with ketchup hummus and your favorite toppings!
  6. Enjoy!
