Turkey Taco Portabellas

Low-sodium heart-healthy tacos
Ingredients
  • 4 large portabellas
  • 1 lb of ground turkey
  • ¼ chopped red onions
  • ½ dried poblano pepper
  • 1 clove of mixed garlic or 1 tsp of minced garlic
  • one 14.5 oz. can of diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 3 green onions chopped
  • 1 tsp dried parsley
  • pepper to taste
  • (optional)-Mrs. DASH extra spicy or garlic & herb seasoning
Instructions
  1. Preheat broiler on low. Remove and discard the stems; scoop out the guts from the inside of the mushroom and discard
  2. Lightly spray the mushroom caps with olive oil; broil for 5-8 min and remove from broiler
  3. While they bake, brown the turkey with onion, cumin, chili powder, pepper, and garlic in a skillet over medium heat. After browned, reduce heat, add tomatoes and parsley and simmer for 8 mins.
  4. Scoop the taco mix into the four mushroom cups
  5. For extra flavor top with Cilantro Lime Sauce and green onions
