Spicy Red Beans and Quinoa Salad

Heart-healthy way of spicy!
Ingredients
  • ¼ cup of apple cider vinegar
  • 4 cloves of minced garlic
  • Zest and juice of two limes
  • 1.5 tbsp minced ginger
  • 2 tsp crushed red pepper
  • 4 cups of cooked quinoa
  • 1 can of low sodium red beans
  • ½ of chopped, fresh cilantro
  • 6 green onions sliced
  • 4 cups of spinach
  • 1 cup of bean sprouts
  • (optional) Mrs.DASH extra spicy or garlic & herb blend seasoning
Instructions
  1. Cook 2 cups of dried quinoa to yield 4 cups of cooked quinoa; place in the refrigerator to cool.
  2. Combine the apple cider vinegar, garlic, lime juice and zest, ginger, and crushed pepper in a large bowl and mix well. Add the quinoa, red beans, bean sprouts, cilantro, and green onions and toss
  3. Refrigerate, cool and serve over a bed of spinach
