8 small red potatoes cut into 2 in., bite-sized pieces
6 cups of vegetable or chicken broth
1 small red onion diced
2 zucchinis, sliced into bite sized pieces
2 cups of baby carrots cut in half
2 stalks of celery chopped
1 red bell pepper chopped
1 cup of broccoli stalks
1 clove (or 1 tsp) of minced garlic
2 tbsp of crushed thyme
2 tsp cumin
3 tsp of turmeric
3 tsp dill
pepper to taste
(optional) Mrs. DASH extra spicy or garlic & herb seasonal blend
Instructions
Combine in a large pot; vegetable stock, potatoes, onion, zucchini, carrots, celery, bell pepper, broccoli, garlic, thyme, cumin, turmeric and pepper (everything except the dill).
Bring to a boil over high heat then reduce to medium-low and simmer for 30 minutes, or until vegetable are tender
Stir in dill
Let cool and serve
