My favorite recipe from Blue Moon Vegan
Ingredients
  • Biscuits
  • 95 g almond flour
  • 46 g chickpea flour
  • 74 g white rice flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp organic cane sugar
  • ½ tsp sea salt
  • ½ tsp xanthan gum
  • ⅓ cup coconut oil
  • ½ tsp apple cider vinegar
  • unsweetened coconut milk
  • beverage or almond milk
Instructions
  1. Preheat oven to 375 degrees
  2. Sift together all dry ingredients in a large bowl
  3. Cut in coconut oil using pastry cutter, knives,
  4. or crumble by hand
  5. Until mixture is coarse but evenly textured
  6. Mix cider vinegar in ¼ cup of the milk
  7. Add to flour mixture and mix by hand
  8. Continue mixing in small amounts of the milk
  9. Until a soft dough forms
  10. Avoid kneading or overworking the dough
  11. Allow dough to rest in bowl for 5 minutes
  12. Roll our to ¾" thickness on floured board
  13. Cut with biscuit cutter
  14. Re-rolling dough scraps until all is used up
  15. Bake on ungreased cookie sheet for 15 minutes
  16. or Until biscuits are golden brown
  17. Make 1 dozen biscuits
