Easy to make chicken salad wraps
Ingredients
  • 12 oz. cooked chicken breast shredded/ chopped
  • ½ avocado
  • 3 Tbsp. 0% plain strained Greek yogurt
  • ½ c. red seedless grapes, halved
  • 2 Tbsp. unsweetened dried cranberries
  • 1 Tbsp. red onion chopped
  • ¼ tsp. garlic powder
  • Salt and pepper to taste
  • Cherry tomatoes/ shredded carrot strips- use for garnish
  • 4 large leaves Bibb or Romaine lettuce
Instructions
  1. In medium bowl, mash avocado, add Greek yogurt, red onion, and garlic powder; Mix well
  2. Add chicken; Mix until combined
  3. Stir in grapes and cranberries
  4. Divide chicken salad among 4 leaves of lettuce and roll up burrito-style.
  5. Garnish with sliced cherry tomatoes and grated carrots
  6. Enjoy!
