Spicy baked Plantains

Need an energy boost...Try our baked spicy plantains.
Ingredients
- 8-10 small plantains (green/yellow- not too riped!)
- 1½ tbsp. olive oil
- ½ tsp cumin
- ⅛-1 tsp. red pepper blend or cayenne pepper
- Salt and pepper to taste
- Olive oil-pan spray
- ¼-2/3 cup of ketchup used as dip
- Hot sauce (optional)
Instructions
- Preheat oven 400 F
- Peel and slice plantains into small to medium- sized slices.
- Put sliced plantains into mixing bowl. In bowl
- toss plantain slices with olive oil and seasonings
- Lightly spray a large sized cookie sheet with olive oil
- Evenly spread a single layer of sliced plantains on the cookie sheet
- Bake for 20 to 25 mins. or until evenly brown; turn slices after about 10 mins.
- Watch closely can burn fast and easily!
- Serve with ketchup dip
Notes
Good source of potassium, Vitamin A & Vitamin C, and dietary fiber
