Chicken Salad Lettuce Wraps

Easy to make chicken salad wraps
Ingredients
- 12 oz. cooked chicken breast shredded/ chopped
- ½ avocado
- 3 Tbsp. 0% plain strained Greek yogurt
- ½ c. red seedless grapes, halved
- 2 Tbsp. unsweetened dried cranberries
- 1 Tbsp. red onion chopped
- ¼ tsp. garlic powder
- Salt and pepper to taste
- Cherry tomatoes/ shredded carrot strips- use for garnish
- 4 large leaves Bibb or Romaine lettuce
Instructions
- In medium bowl, mash avocado, add Greek yogurt, red onion, and garlic powder; Mix well
- Add chicken; Mix until combined
- Stir in grapes and cranberries
- Divide chicken salad among 4 leaves of lettuce and roll up burrito-style.
- Garnish with sliced cherry tomatoes and grated carrots
- Enjoy!
