Flax Crusted Chicken serve with Sweet Potato and Broccoli

Have a balanced fiber rich dinner with delicious flax crusted chicken, a sweet potato and a cup of streamed broccoli.... Enjoy!
Ingredients
- 6 oz. chicken breast
- 1 egg white
- flax and oat crust
- 1 medium sweet potato (baked w/ cinnamon)
- 1 cup streamed broccoli
Instructions
- For chicken:
- Grind or blend 2 tbsp. of flaxseed with 2 tbsp. of rolled oats
- Baste uncooked chicken breast with egg white
- Cover chicken with flax/oat crust
- Lightly grease a casserole dish
- Preheat oven at 400 degrees
- Bake flax/oat crusted chicken for 25 minutes or until it is brown and reaches 180 degrees
Notes
Serve with:
a baked sweet potato garnished with cinnamon
1 cup of streamed broccoli
Salt and pepper for taste or use a healthy blend of Mrs. Dash salt-free
