Loaded Veggie Fries with Ketchup Hummus

Try this delicious vegetarian snack.
Ingredients
- Fries
- 6 stalks of celery-washed, sliced in half and sliced again longways down the middle
- 2 cups of carrot sticks or baby carrots- washed
- 2 bell peppers-washed, sliced into strips
- Ketchup Hummus
- 1 (15 oz.) can of garbanzo beans or chickpeas, rinsed and drained
- ¼ cup of ketchup
- 1 clove of garlic
- 1 tbsp lemon juice
- ¼ tsp ground cumin
- 2 tbsp olive oil
- Toppings
- Add a few of your favorite toppings, scallions, jalapenos, or avocado
Instructions
- Combine all hummus ingredients (chickpeas, ketchup, garlic, lemon juice, cumin, and olive oil) in a food processor
- Blend for 2 minutes or until smooth
- Transfer to a bowl or empty ketchup bottle
- Place sliced veggies into a paper fry boat or plate
- Top with ketchup hummus and your favorite toppings!
