Sauteed Tuscan Kale and Spinach Greens

Try this low-sodium heart healthy way of cooking greens
Ingredients
- 1 bunch tuscan kale greens
- 1 bunch spinach
- ½ cup finely chopped cremini mushrooms
- ½ cup finely chopped onion
- 1 tbsp. minced garlic or 2 cloves of garlic- finely chopped
- 2 tbsp. olive oil
- Seasoned to taste- Mrs. DASH lemon pepper seasoning
- 1 pinch/ sprinkle cayenne pepper or Mrs. DASH spicy jalapeno seasoning
Instructions
- Wash tuscan kale and spinach in a sink of cold water
- Lift greens out of water; leaving grit at bottom of sink
- Without drying the leaves immediately remove and discard tough stems
- Chop the tuscan kale leaves into 1-inch pieces; place greens in a large bowl
- In large skillet, heat olive oil over medium-high heat
- In batches, add greens, stirring with tongs until it wilts before adding more- about 2 minutes
- Add garlic and season to taste with Mrs. DASH lemon pepper seasoning; Stir
- Add mushrooms and onions, and a pinch/sprinkle of cayenne pepper or Mrs. DASH spicy jalapeno seasoning
- Place a cover over the top
- Cook stirring often with tongs just until greens are tender, about 5-7 minutes
- Serve hot
