Sauteed Tuscan Kale and Spinach Greens

Try this low-sodium heart healthy way of cooking greens

Serves: 4
Ingredients
  • 1 bunch tuscan kale greens
  • 1 bunch spinach
  • ½ cup finely chopped cremini mushrooms
  • ½ cup finely chopped onion
  • 1 tbsp. minced garlic or 2 cloves of garlic- finely chopped
  • 2 tbsp. olive oil
  • Seasoned to taste- Mrs. DASH lemon pepper seasoning
  • 1 pinch/ sprinkle cayenne pepper or Mrs. DASH spicy jalapeno seasoning
Instructions
  1. Wash tuscan kale and spinach in a sink of cold water
  2. Lift greens out of water; leaving grit at bottom of sink
  3. Without drying the leaves immediately remove and discard tough stems
  4. Chop the tuscan kale leaves into 1-inch pieces; place greens in a large bowl
  5. In large skillet, heat olive oil over medium-high heat
  6. In batches, add greens, stirring with tongs until it wilts before adding more- about 2 minutes
  7. Add garlic and season to taste with Mrs. DASH lemon pepper seasoning; Stir
  8. Add mushrooms and onions, and a pinch/sprinkle of cayenne pepper or Mrs. DASH spicy jalapeno seasoning
  9. Place a cover over the top
  10. Cook stirring often with tongs just until greens are tender, about 5-7 minutes
  11. Serve hot
Notes
Add any of the many flavors of Mrs. DASH salt-free seasoning
