Bless Yo'Heart Vegetable Soup

Heart-healthy soup
Ingredients
- 8 small red potatoes cut into 2 in., bite-sized pieces
- 6 cups of vegetable or chicken broth
- 1 small red onion diced
- 2 zucchinis, sliced into bite sized pieces
- 2 cups of baby carrots cut in half
- 2 stalks of celery chopped
- 1 red bell pepper chopped
- 1 cup of broccoli stalks
- 1 clove (or 1 tsp) of minced garlic
- 2 tbsp of crushed thyme
- 2 tsp cumin
- 3 tsp of turmeric
- 3 tsp dill
- pepper to taste
- (optional) Mrs. DASH extra spicy or garlic & herb seasonal blend
Instructions
- Combine in a large pot; vegetable stock, potatoes, onion, zucchini, carrots, celery, bell pepper, broccoli, garlic, thyme, cumin, turmeric and pepper (everything except the dill).
- Bring to a boil over high heat then reduce to medium-low and simmer for 30 minutes, or until vegetable are tender
- Stir in dill
- Let cool and serve
