Naked Baked Chicken with Oven Roasted Sweet Potatoes

Ingredients
- Three 8 oz skinless chicken breast
- 3 eggs whites
- 4 sweet potatoes
- 2 onions
- 2 large apples (Granny Smith or a firmer apple)
- 3 TBSP olive oil
- salt/pepper to taste
- ½ tsp dried rosemary
- ½ tsp dried minced garlic
- Optional
- 4 strips turkey bacon
Instructions
- Preheat oven 425 F. Cut chicken into 2x2 in cubes dry with paper towel. In separate bowl, lightly whisk egg whites add seasonings, rosemary and garlic. Add chicken cubes to bowl, stir so chicken is covered with mixture. Place chicken cubes on greased pan or greased cooling rack placed on cookie sheet. Bake at 425 F for 20-25 min until chicken is 180 F
- Preheat oven 400F.Peel/core apples, peel sweet potatoes,onions. Cut apples, potatoes into 1" cubes. Slice onion in half lengthwise. Cut each half in fourths lengthwise separate onion fourths in half, keeping several layers intact. Cut bacon into 1" pieces. Transfer apples, onions, potatoes, bacon to large jellyroll pan (12" x17", or two smaller pans). Drizzle veggies, apples, bacon with olive oil and toss to coat. Spread out evenly on pan. Sprinkle with salt,pepper,rosemary. Place pan in oven. Bake for 40-45 min stirring every 10-15 min. When done, veggies should be nicely browned and fork-tender
