Spicy Red Beans and Quinoa Salad

Heart-healthy way of spicy!
Ingredients
- ¼ cup of apple cider vinegar
- 4 cloves of minced garlic
- Zest and juice of two limes
- 1.5 tbsp minced ginger
- 2 tsp crushed red pepper
- 4 cups of cooked quinoa
- 1 can of low sodium red beans
- ½ of chopped, fresh cilantro
- 6 green onions sliced
- 4 cups of spinach
- 1 cup of bean sprouts
- (optional) Mrs.DASH extra spicy or garlic & herb blend seasoning
Instructions
- Cook 2 cups of dried quinoa to yield 4 cups of cooked quinoa; place in the refrigerator to cool.
- Combine the apple cider vinegar, garlic, lime juice and zest, ginger, and crushed pepper in a large bowl and mix well. Add the quinoa, red beans, bean sprouts, cilantro, and green onions and toss
- Refrigerate, cool and serve over a bed of spinach
