Turkey Taco Portabellas

Low-sodium heart-healthy tacos
Ingredients
- 4 large portabellas
- 1 lb of ground turkey
- ¼ chopped red onions
- ½ dried poblano pepper
- 1 clove of mixed garlic or 1 tsp of minced garlic
- one 14.5 oz. can of diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 3 green onions chopped
- 1 tsp dried parsley
- pepper to taste
- (optional)-Mrs. DASH extra spicy or garlic & herb seasoning
Instructions
- Preheat broiler on low. Remove and discard the stems; scoop out the guts from the inside of the mushroom and discard
- Lightly spray the mushroom caps with olive oil; broil for 5-8 min and remove from broiler
- While they bake, brown the turkey with onion, cumin, chili powder, pepper, and garlic in a skillet over medium heat. After browned, reduce heat, add tomatoes and parsley and simmer for 8 mins.
- Scoop the taco mix into the four mushroom cups
- For extra flavor top with Cilantro Lime Sauce and green onions
