Aunt Karen's "Toretellini" soup recipe

It's cold outside! Time to warm up with this delicious healthy tortellini soup

Recipe type: soup

Serves: 2-4
Ingredients
  • 2 cloves of chopped garlic
  • 3 tablespoons of olive oil
  • 2 cans of chicken broth
  • 1 pkg of cheese filled frozen tortellini noodles
  • 1 pkg of frozen spinach
  • 1 can of stewed tomatoes
Instructions
  1. In stew cooking pan
  2. Begin by browning the cloves of chopped garlic in the olive oil
  3. Add the chicken broth and frozen tortellini noodles
  4. Cook until nearly boiling (should take about 5 minutes)
  5. Add the package of frozen spinach and can of stewed tomatoes including the tomato liquids
  6. Cook for another 5-10 minutes or until the ingredients are hot
Notes
** for healthier choices substitute with
low- sodium chicken broth
non-cheese filled tortellini noodles
low-sodium can of stewed tomatoes
